Ingredients

  • All-purpose flour - 150g
  • Coconut oil - 70g, melted
  • Maple syrup - 30g
  • Salt - 1/4 tsp
  • Ice water - 2-3 tbsp
  • Fresh apricots - 6, halved and pitted
  • Brown sugar - 25g
  • Cornstarch - 1 tsp
  • Almond extract - 1/2 tsp
  • Powdered sugar - for dusting (optional)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the flour and salt. Add the melted coconut oil and maple syrup, and mix until crumbly.
  3. Gradually add ice water, one tablespoon at a time, until the dough holds together.
  4. Form the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
  5. Roll out the chilled dough on a floured surface to fit a 20cm tart pan. Press the dough into the pan and trim any excess.
  6. In a separate bowl, mix the brown sugar, cornstarch, and almond extract. Toss the apricot halves in this mixture until well coated.
  7. Arrange the apricot halves, cut side up, in the prepared tart shell.
  8. Bake the tart in the preheated oven for 25-30 minutes, or until the crust is golden and the apricots are tender.
  9. Allow the tart to cool slightly before dusting with powdered sugar, if desired. Serve warm or at room temperature.
