- All-purpose flour - 150g
- Coconut oil - 70g, melted
- Maple syrup - 30g
- Salt - 1/4 tsp
- Ice water - 2-3 tbsp
- Fresh apricots - 6, halved and pitted
- Brown sugar - 25g
- Cornstarch - 1 tsp
- Almond extract - 1/2 tsp
- Powdered sugar - for dusting (optional)
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the flour and salt. Add the melted coconut oil and maple syrup, and mix until crumbly.
- Gradually add ice water, one tablespoon at a time, until the dough holds together.
- Form the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
- Roll out the chilled dough on a floured surface to fit a 20cm tart pan. Press the dough into the pan and trim any excess.
- In a separate bowl, mix the brown sugar, cornstarch, and almond extract. Toss the apricot halves in this mixture until well coated.
- Arrange the apricot halves, cut side up, in the prepared tart shell.
- Bake the tart in the preheated oven for 25-30 minutes, or until the crust is golden and the apricots are tender.
- Allow the tart to cool slightly before dusting with powdered sugar, if desired. Serve warm or at room temperature.
