- Almond flour - 100 grams
- All-purpose flour - 50 grams
- Coconut oil - 40 grams, melted
- Maple syrup - 60 grams
- Almond milk - 3 tablespoons
- Cornstarch - 1 tablespoon
- Vanilla extract - 1 teaspoon
- Salt - a pinch
- Ground cinnamon - 1/2 teaspoon
- Sliced almonds - 20 grams (for topping)
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine almond flour, all-purpose flour, and salt.
- Add melted coconut oil, maple syrup, almond milk, and vanilla extract to the dry ingredients. Mix until a dough forms.
- Press the dough into a 15 cm (6 inch) tart pan evenly across the bottom and up the sides. Prick the bottom with a fork to prevent bubbling.
- Place the crust in the oven and bake for 10-12 minutes until lightly golden. Remove and let it cool slightly.
- In another bowl, whisk together cornstarch, a pinch of salt, ground cinnamon, and remaining maple syrup until smooth.
- Pour the mixture into the cooled crust and smooth the top with a spatula.
- Sprinkle sliced almonds on top and bake for an additional 15-20 minutes until the filling is set.
- Remove from the oven and let it cool to room temperature before slicing and serving.
