Ingredients

  • Almond flour - 100 grams
  • All-purpose flour - 50 grams
  • Coconut oil - 40 grams, melted
  • Maple syrup - 60 grams
  • Almond milk - 3 tablespoons
  • Cornstarch - 1 tablespoon
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch
  • Ground cinnamon - 1/2 teaspoon
  • Sliced almonds - 20 grams (for topping)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, all-purpose flour, and salt.
  3. Add melted coconut oil, maple syrup, almond milk, and vanilla extract to the dry ingredients. Mix until a dough forms.
  4. Press the dough into a 15 cm (6 inch) tart pan evenly across the bottom and up the sides. Prick the bottom with a fork to prevent bubbling.
  5. Place the crust in the oven and bake for 10-12 minutes until lightly golden. Remove and let it cool slightly.
  6. In another bowl, whisk together cornstarch, a pinch of salt, ground cinnamon, and remaining maple syrup until smooth.
  7. Pour the mixture into the cooled crust and smooth the top with a spatula.
  8. Sprinkle sliced almonds on top and bake for an additional 15-20 minutes until the filling is set.
  9. Remove from the oven and let it cool to room temperature before slicing and serving.
