  • Water - 75 ml
  • Salt - 1/2 teaspoon
  • Ricotta cheese - 200 grams
  • Egg - 1 large
  • Grated Parmesan cheese - 50 grams
  • Fresh basil - 10 grams, chopped
  • Black pepper - to taste
  • Cherry tomatoes - 100 grams, halved

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, combine the whole wheat flour and salt, then mix in the olive oil and water until a dough forms. Knead the dough for about 5 minutes until smooth.
  3. Cover the dough with a damp cloth and let it rest for 15 minutes.
  4. In another bowl, mix the ricotta cheese, egg, grated Parmesan, chopped basil, and black pepper until well combined.
  5. Roll out the dough on a floured surface into a circle approximately 30 cm in diameter.
  6. Transfer the dough to a parchment-lined baking sheet and spread the cheese mixture evenly over the base.
  7. Arrange the halved cherry tomatoes on top of the cheese mixture.
  8. Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown and the cheese is set.
  9. Remove from the oven, let it cool for a few minutes, then slice and serve warm.
