  • Lemon juice - 60 ml
  • Lemon zest - 1 tablespoon
  • Cornstarch - 30 grams
  • Coconut milk - 120 ml
  • Agave syrup - 40 grams
  • Salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, melted coconut oil, and maple syrup. Mix until a dough forms.
  3. Press the dough into the bottom and sides of a tart pan to create the crust. Prick the bottom with a fork.
  4. Bake the crust in the preheated oven for 15 minutes or until lightly golden. Remove and let cool.
  5. In a saucepan, whisk together lemon juice, lemon zest, cornstarch, coconut milk, agave syrup, and a pinch of salt.
  6. Heat the mixture over medium heat, stirring constantly until it thickens, about 5-7 minutes.
  7. Once thickened, pour the lemon filling into the cooled tart shell, smoothing the top.
  8. Chill the tart in the refrigerator for at least 15 minutes before serving.
