Tarte au Chocolat

Ingredients
- All-purpose flour - 100g
- Unsalted butter - 50g, cold and cubed
- Powdered sugar - 30g
- Egg yolk - 1 large
- Cold water - 1-2 tablespoons
- Dark chocolate (70% cocoa) - 100g, chopped
- Heavy cream - 100ml
- Vanilla extract - 1/2 teaspoon
- Salt - a pinch
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the flour, powdered sugar, and a pinch of salt. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
- Add the egg yolk and cold water, mixing until the dough comes together. Wrap in plastic wrap and refrigerate for 30 minutes.
- Roll out the chilled dough on a lightly floured surface to fit a 20cm tart pan. Press the dough into the pan and trim any excess. Prick the bottom with a fork.
- Line the tart shell with parchment paper and fill with baking weights or dried beans. Bake for 15 minutes, then remove the weights and bake for another 5 minutes until lightly golden. Let it cool.
- In a saucepan, heat the heavy cream over medium heat until just simmering. Remove from heat and add the chopped dark chocolate and vanilla extract. Stir until smooth and completely melted.
- Pour the chocolate mixture into the cooled tart shell and smooth the top. Refrigerate for at least 30 minutes until set.
- Slice and serve chilled or at room temperature, optionally garnished with whipped cream or fresh berries.
