Ingredients

  • All-purpose flour - 100g
  • Unsalted butter - 50g, cold and cubed
  • Powdered sugar - 30g
  • Egg yolk - 1 large
  • Cold water - 1-2 tablespoons
  • Dark chocolate (70% cocoa) - 100g, chopped
  • Heavy cream - 100ml
  • Vanilla extract - 1/2 teaspoon
  • Salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the flour, powdered sugar, and a pinch of salt. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
  3. Add the egg yolk and cold water, mixing until the dough comes together. Wrap in plastic wrap and refrigerate for 30 minutes.
  4. Roll out the chilled dough on a lightly floured surface to fit a 20cm tart pan. Press the dough into the pan and trim any excess. Prick the bottom with a fork.
  5. Line the tart shell with parchment paper and fill with baking weights or dried beans. Bake for 15 minutes, then remove the weights and bake for another 5 minutes until lightly golden. Let it cool.
  6. In a saucepan, heat the heavy cream over medium heat until just simmering. Remove from heat and add the chopped dark chocolate and vanilla extract. Stir until smooth and completely melted.
  7. Pour the chocolate mixture into the cooled tart shell and smooth the top. Refrigerate for at least 30 minutes until set.
  8. Slice and serve chilled or at room temperature, optionally garnished with whipped cream or fresh berries.
