Ingredients

  • All-purpose flour - 100 grams
  • Coconut oil - 50 grams (melted)
  • Maple syrup - 30 grams
  • Salt - a pinch
  • Ground coffee - 20 grams
  • Coconut cream - 150 grams
  • Almond milk - 50 ml
  • Cornstarch - 15 grams
  • Vanilla extract - 1 teaspoon
  • Cocoa powder - 1 tablespoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine the all-purpose flour, melted coconut oil, maple syrup, and a pinch of salt. Mix until a dough forms.
  3. Press the dough into the bottom and sides of a small tart pan (approximately 15 cm in diameter) to form the crust. Prick the base with a fork and bake for 10-12 minutes until lightly golden. Remove from the oven and let it cool.
  4. In a saucepan, combine the ground coffee, coconut cream, almond milk, cornstarch, and vanilla extract. Cook over medium heat, whisking constantly, until it thickens and becomes smooth (about 5-7 minutes).
  5. Remove the saucepan from heat and stir in the cocoa powder until fully incorporated.
  6. Pour the coffee filling into the cooled tart crust and spread it evenly.
  7. Chill the tart in the refrigerator for at least 30 minutes to set before serving.
