- Maple syrup - 30 grams
- Salt - a pinch
- Ground coffee - 20 grams
- Coconut cream - 150 grams
- Almond milk - 50 ml
- Cornstarch - 15 grams
- Vanilla extract - 1 teaspoon
- Cocoa powder - 1 tablespoon
Steps
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine the all-purpose flour, melted coconut oil, maple syrup, and a pinch of salt. Mix until a dough forms.
- Press the dough into the bottom and sides of a small tart pan (approximately 15 cm in diameter) to form the crust. Prick the base with a fork and bake for 10-12 minutes until lightly golden. Remove from the oven and let it cool.
- In a saucepan, combine the ground coffee, coconut cream, almond milk, cornstarch, and vanilla extract. Cook over medium heat, whisking constantly, until it thickens and becomes smooth (about 5-7 minutes).
- Remove the saucepan from heat and stir in the cocoa powder until fully incorporated.
- Pour the coffee filling into the cooled tart crust and spread it evenly.
- Chill the tart in the refrigerator for at least 30 minutes to set before serving.
