Ingredients

  • Green olives - 100g, pitted
  • Black olives - 100g, pitted
  • Capers - 30g, rinsed
  • Anchovy fillets - 4 pieces, drained
  • Garlic - 1 clove, minced
  • Fresh lemon juice - 1 tablespoon
  • Olive oil - 3 tablespoons
  • Fresh thyme - 1 teaspoon, chopped
  • Black pepper - to taste

Steps

  1. In a food processor, combine the green olives, black olives, capers, anchovy fillets, and minced garlic.
  2. Pulse the mixture until coarsely chopped.
  3. Add the fresh lemon juice, olive oil, and chopped thyme to the mixture.
  4. Blend until the tapenade reaches your desired consistency, scraping down the sides as needed.
  5. Season with black pepper to taste.
  6. Transfer the tapenade to a serving bowl and let it sit for at least 10 minutes to allow the flavors to meld.
