- Chicken thighs - 400 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Bell pepper - 1 medium, diced
- Canned chickpeas - 200 grams, drained and rinsed
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Preserved lemon - 1, rind only, sliced
- Fresh coriander - a handful, chopped
- Water - 300 milliliters
Steps
- In a tajine or large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Add the chicken thighs to the pot and brown them on all sides, about 5-7 minutes.
- Stir in the sliced carrot, zucchini, and bell pepper, cooking for another 5 minutes.
- Sprinkle in the cumin, cinnamon, paprika, turmeric, salt, and black pepper, stirring well to coat the chicken and vegetables with the spices.
- Add the preserved lemon slices and chickpeas to the pot, then pour in the water. Bring the mixture to a simmer.
- Cover the pot with a lid and reduce the heat to low. Let it cook for about 30-35 minutes, or until the chicken is cooked through and tender.
- Once cooked, remove from heat and stir in the chopped fresh coriander.
- Serve the Tajine de Poulet warm with couscous or crusty bread.
