Tajine de Poulet

Ingredients

  • Chicken thighs - 400 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Bell pepper - 1 medium, diced
  • Canned chickpeas - 200 grams, drained and rinsed
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Preserved lemon - 1, rind only, sliced
  • Fresh coriander - a handful, chopped
  • Water - 300 milliliters

Steps

  1. In a tajine or large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and sauté for another minute until fragrant.
  3. Add the chicken thighs to the pot and brown them on all sides, about 5-7 minutes.
  4. Stir in the sliced carrot, zucchini, and bell pepper, cooking for another 5 minutes.
  5. Sprinkle in the cumin, cinnamon, paprika, turmeric, salt, and black pepper, stirring well to coat the chicken and vegetables with the spices.
  6. Add the preserved lemon slices and chickpeas to the pot, then pour in the water. Bring the mixture to a simmer.
  7. Cover the pot with a lid and reduce the heat to low. Let it cook for about 30-35 minutes, or until the chicken is cooked through and tender.
  8. Once cooked, remove from heat and stir in the chopped fresh coriander.
  9. Serve the Tajine de Poulet warm with couscous or crusty bread.
