Ingredients

  • Bulgur wheat - 100 grams
  • Fresh parsley - 1 bunch (about 60 grams)
  • Tomatoes - 2 medium-sized (about 200 grams)
  • Fresh mint leaves - 10 grams
  • Green onion - 2 stalks
  • Lemon juice - 30 ml
  • Olive oil - 30 ml
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Rinse the bulgur wheat under cold water, then soak it in a bowl of warm water for about 10 minutes until it softens. Drain any excess water and set aside.
  2. Finely chop the parsley, mint, and green onions. Dice the tomatoes into small cubes.
  3. In a large mixing bowl, combine the soaked bulgur wheat, chopped parsley, mint, green onions, and diced tomatoes.
  4. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
  5. Pour the dressing over the bulgur mixture and toss well to combine, ensuring everything is evenly coated.
