Ingredients

  • 2 medium eggplants
  • 200 grams cherry tomatoes, halved
  • 100 grams feta cheese, crumbled
  • 50 grams breadcrumbs
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried herbes de Provence
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Steps

  1. Preheat your BBQ to medium heat.
  2. Cut the eggplants in half lengthwise and scoop out the flesh, leaving a 1 cm border. Chop the scooped-out flesh and set aside.
  3. Brush the eggplant halves with 1 tablespoon of olive oil and season with salt and pepper. Place them cut-side down on the grill and cook for about 10 minutes until slightly charred and tender.
  4. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 5 minutes.
  5. Add the chopped eggplant flesh and cherry tomatoes to the skillet. Stir in the herbes de Provence, and cook for another 5-7 minutes until the mixture is well combined and the tomatoes are soft.
  6. Remove the skillet from heat and mix in the breadcrumbs and crumbled feta cheese. Adjust seasoning with salt and pepper as needed.
  7. Fill each grilled eggplant half with the prepared mixture, packing it in well.
  8. Return the stuffed eggplants to the grill and close the lid. Cook for an additional 10-15 minutes until the filling is heated through and slightly golden.
  9. Garnish with fresh basil leaves before serving.
