Ingredients
- 2 medium eggplants
- 200 grams cherry tomatoes, halved
- 100 grams feta cheese, crumbled
- 50 grams breadcrumbs
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried herbes de Provence
- Salt and pepper to taste
- Fresh basil leaves for garnish
Steps
- Preheat your BBQ to medium heat.
- Cut the eggplants in half lengthwise and scoop out the flesh, leaving a 1 cm border. Chop the scooped-out flesh and set aside.
- Brush the eggplant halves with 1 tablespoon of olive oil and season with salt and pepper. Place them cut-side down on the grill and cook for about 10 minutes until slightly charred and tender.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 5 minutes.
- Add the chopped eggplant flesh and cherry tomatoes to the skillet. Stir in the herbes de Provence, and cook for another 5-7 minutes until the mixture is well combined and the tomatoes are soft.
- Remove the skillet from heat and mix in the breadcrumbs and crumbled feta cheese. Adjust seasoning with salt and pepper as needed.
- Fill each grilled eggplant half with the prepared mixture, packing it in well.
- Return the stuffed eggplants to the grill and close the lid. Cook for an additional 10-15 minutes until the filling is heated through and slightly golden.
- Garnish with fresh basil leaves before serving.
