Ingredients

  • Eggplant - 1 large (about 300g)
  • Olive oil - 2 tablespoons
  • Red onion - 1 small, diced (about 100g)
  • Garlic - 2 cloves, minced
  • Bell pepper - 1 small, diced (about 100g)
  • Zucchini - 1 small, diced (about 100g)
  • Cherry tomatoes - 150g, halved
  • Cooked quinoa - 100g
  • Fresh basil - 1/4 cup, chopped
  • Balsamic vinegar - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutritional yeast - 2 tablespoons

Steps

  1. Preheat the BBQ grill to medium heat.
  2. Cut the eggplant in half lengthwise and scoop out the flesh, leaving about 1 cm of the skin intact. Set the eggplant halves aside.
  3. Chop the scooped-out eggplant flesh into small pieces and set aside.
  4. In a skillet over medium heat, add 1 tablespoon of olive oil. Sauté the diced red onion and garlic for about 3-4 minutes until softened.
  5. Add the bell pepper, zucchini, and chopped eggplant flesh to the skillet. Cook for another 5-7 minutes until the vegetables are tender.
  6. Stir in the cherry tomatoes, cooked quinoa, chopped basil, balsamic vinegar, salt, black pepper, and nutritional yeast. Cook for an additional 2-3 minutes until heated through.
  7. Fill each eggplant half with the vegetable and quinoa mixture, packing it tightly.
  8. Drizzle the remaining olive oil over the stuffed eggplants.
  9. Wrap each stuffed eggplant half in aluminum foil and place them on the grill. Cook for 20-25 minutes until the eggplant is tender.
  10. Remove from the grill, unwrap the foil, and serve warm.
