Ingredients
- Zucchini - 2 large
- Ricotta cheese - 250 grams
- Fresh spinach - 150 grams
- Parmesan cheese - 50 grams, grated
- Egg - 1 large
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Tomato sauce - 200 grams
- Basil - 1 teaspoon, dried
Steps
- Preheat the oven to 180°C (350°F).
- Wash the zucchinis and slice them lengthwise into thin strips (about 0.5 cm thick).
- Sprinkle salt on the zucchini strips and let them sit for 10 minutes to draw out moisture. Pat dry with a paper towel.
- In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant, about 1 minute.
- Add fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat.
- In a mixing bowl, combine ricotta cheese, sautéed spinach, Parmesan cheese, egg, black pepper, and mix well.
- Spread a thin layer of tomato sauce on the bottom of a baking dish.
- Take a zucchini strip, place a spoonful of the ricotta mixture at one end, and roll it up tightly. Repeat with the remaining strips and filling.
- Arrange the zucchini cannelloni in the baking dish seam-side down. Pour the remaining tomato sauce over the top and sprinkle with dried basil.
- Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes to allow the top to brown slightly.
- Let cool for a few minutes before serving.
