- Spaghetti squash - 1 medium (about 1 kg)
- Ground beef (or turkey) - 250 grams
- Olive oil - 1 tablespoon
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 small, diced
- Celery stalk - 1 small, diced
- Canned crushed tomatoes - 400 grams
- Tomato paste - 2 tablespoons
- Dried oregano - 1 teaspoon
- Dried basil - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Parmesan cheese (optional) - for serving
Steps
- Preheat the oven to 200°C (400°F).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Drizzle the inside of the squash with olive oil and season with salt and pepper.
- Place the squash halves cut-side down on a baking sheet and roast in the preheated oven for about 30-35 minutes, or until tender.
- While the squash is roasting, heat the olive oil in a large skillet over medium heat.
- Add the diced onion, carrot, and celery to the skillet, sautéing for about 5-7 minutes until the vegetables are softened.
- Add the minced garlic and ground beef (or turkey) to the skillet, cooking until the meat is browned and cooked through, about 5-7 minutes.
- Stir in the crushed tomatoes, tomato paste, dried oregano, dried basil, salt, and black pepper. Simmer the sauce for about 15 minutes, allowing the flavors to meld.
- Once the squash is done roasting, use a fork to scrape the flesh into spaghetti-like strands.
- Serve the Bolognese sauce over the spaghetti squash, topped with grated Parmesan cheese if desired.
