  • Celery - 1 stalk, diced
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Tomatoes - 400 grams, chopped (canned or fresh)
  • Vegetable broth - 500 ml
  • Herbs de Provence - 1 teaspoon
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and sauté for about 5 minutes until translucent.
  3. Stir in the minced garlic, diced carrot, and celery; cook for another 3-4 minutes.
  4. Add the diced zucchini and red bell pepper, cooking for an additional 5 minutes.
  5. Incorporate the chopped tomatoes, vegetable broth, herbs de Provence, and bay leaf.
  6. Season with salt and black pepper to taste, then bring the mixture to a boil.
  7. Once boiling, reduce the heat and let it simmer uncovered for about 15 minutes, stirring occasionally.
  8. Remove the bay leaf before serving, and garnish with fresh basil.
