- Baguette - 2 slices
- Nutritional yeast - 2 tablespoons
- Vegan cheese (optional) - 50g
Steps
- Slice the onions thinly and mince the garlic.
- In a large pot, heat the olive oil over medium heat, then add the onions.
- Cook the onions, stirring frequently, for about 20-25 minutes until they are caramelized and golden brown.
- Add the minced garlic and cook for another 2 minutes until fragrant.
- Pour in the vegetable broth and add the dried thyme, bay leaf, salt, and black pepper.
- Bring the soup to a simmer and let it cook for an additional 15 minutes.
- While the soup simmers, preheat your oven to 200°C (390°F).
- Place the baguette slices on a baking sheet, sprinkle with nutritional yeast, and add vegan cheese if using, then toast in the oven for about 5-7 minutes until golden.
- Remove the bay leaf from the soup and serve hot, topped with the toasted baguette.
