  • Black pepper - 1/4 teaspoon
  • Baguette - 2 slices
  • Nutritional yeast - 2 tablespoons
  • Vegan cheese (optional) - 50g

Steps

  1. Slice the onions thinly and mince the garlic.
  2. In a large pot, heat the olive oil over medium heat, then add the onions.
  3. Cook the onions, stirring frequently, for about 20-25 minutes until they are caramelized and golden brown.
  4. Add the minced garlic and cook for another 2 minutes until fragrant.
  5. Pour in the vegetable broth and add the dried thyme, bay leaf, salt, and black pepper.
  6. Bring the soup to a simmer and let it cook for an additional 15 minutes.
  7. While the soup simmers, preheat your oven to 200°C (390°F).
  8. Place the baguette slices on a baking sheet, sprinkle with nutritional yeast, and add vegan cheese if using, then toast in the oven for about 5-7 minutes until golden.
  9. Remove the bay leaf from the soup and serve hot, topped with the toasted baguette.
