Ingredients

  • Yellow onions - 3 medium

  • Vegetable broth - 750 ml
  • Dry white wine - 100 ml
  • Thyme - 1 teaspoon, dried or 2 sprigs, fresh
  • Bay leaf - 1
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Baguette - 2 slices
  • Vegan cheese - 50 grams, grated (optional)
  • Fresh parsley - for garnish

Steps

  1. Peel and thinly slice the onions.
  2. In a large pot, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt, stirring occasionally until they caramelize, about 15-20 minutes.
  3. Add minced garlic and cook for an additional 1-2 minutes until fragrant.
  4. Pour in the white wine, scraping the bottom of the pot to deglaze. Allow it to simmer for 2-3 minutes.
  5. Add the vegetable broth, thyme, bay leaf, salt, and black pepper. Bring to a boil, then reduce the heat and let it simmer for 15 minutes.
  6. While the soup simmers, preheat the oven to 180°C (350°F). Place the baguette slices on a baking sheet and bake for 5-7 minutes until lightly toasted.
  7. Remove the bay leaf from the soup. Taste and adjust seasoning as necessary.
  8. Serve the soup hot, topped with toasted baguette slices and vegan cheese if using. Garnish with fresh parsley.
