- Yellow onions - 3 medium
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Vegetable broth - 750 ml
- Dry white wine - 100 ml
- Thyme - 1 teaspoon, dried or 2 sprigs, fresh
- Bay leaf - 1
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Baguette - 2 slices
- Vegan cheese - 50 grams, grated (optional)
- Fresh parsley - for garnish
Steps
- Peel and thinly slice the onions.
- In a large pot, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt, stirring occasionally until they caramelize, about 15-20 minutes.
- Add minced garlic and cook for an additional 1-2 minutes until fragrant.
- Pour in the white wine, scraping the bottom of the pot to deglaze. Allow it to simmer for 2-3 minutes.
- Add the vegetable broth, thyme, bay leaf, salt, and black pepper. Bring to a boil, then reduce the heat and let it simmer for 15 minutes.
- While the soup simmers, preheat the oven to 180°C (350°F). Place the baguette slices on a baking sheet and bake for 5-7 minutes until lightly toasted.
- Remove the bay leaf from the soup. Taste and adjust seasoning as necessary.
- Serve the soup hot, topped with toasted baguette slices and vegan cheese if using. Garnish with fresh parsley.
