Ingredients

  • Yellow onions - 3 medium (about 450g)
  • Vegetable broth - 750ml
  • Olive oil - 2 tablespoons
  • Butter - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • French baguette - 2 slices
  • Gruyère cheese - 100g, grated
  • Parmesan cheese - 30g, grated (optional)

Steps

  1. Peel and thinly slice the onions.
  2. In a large pot, heat the olive oil and butter over medium heat until melted.
  3. Add the sliced onions to the pot, stirring to coat them with the oil and butter.
  4. Cook the onions slowly, stirring occasionally, for about 20-25 minutes until they are caramelized and golden brown.
  5. Add the minced garlic, thyme, and bay leaf to the pot, and cook for an additional 2 minutes until fragrant.
  6. Pour in the vegetable broth, and season with salt and pepper. Bring to a gentle simmer and cook for 10 minutes, allowing the flavors to meld.
  7. While the soup simmers, preheat the broiler in your oven.
  8. Toast the slices of French baguette until crispy, then remove them from the oven.
  9. Ladle the hot soup into oven-safe bowls, place a slice of toasted baguette on top of each bowl, and generously sprinkle with Gruyère cheese and Parmesan cheese if using.
  10. Place the bowls under the broiler for 2-3 minutes until the cheese is bubbly and golden brown. Keep a close eye to prevent burning.
  11. Remove from the oven and let cool slightly before serving.
