- Yellow onions - 3 medium (about 450g)
- Vegetable broth - 750ml
- Olive oil - 2 tablespoons
- Butter - 1 tablespoon
- Garlic - 2 cloves, minced
- Thyme - 1 teaspoon, dried
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- French baguette - 2 slices
- Gruyère cheese - 100g, grated
- Parmesan cheese - 30g, grated (optional)
Steps
- Peel and thinly slice the onions.
- In a large pot, heat the olive oil and butter over medium heat until melted.
- Add the sliced onions to the pot, stirring to coat them with the oil and butter.
- Cook the onions slowly, stirring occasionally, for about 20-25 minutes until they are caramelized and golden brown.
- Add the minced garlic, thyme, and bay leaf to the pot, and cook for an additional 2 minutes until fragrant.
- Pour in the vegetable broth, and season with salt and pepper. Bring to a gentle simmer and cook for 10 minutes, allowing the flavors to meld.
- While the soup simmers, preheat the broiler in your oven.
- Toast the slices of French baguette until crispy, then remove them from the oven.
- Ladle the hot soup into oven-safe bowls, place a slice of toasted baguette on top of each bowl, and generously sprinkle with Gruyère cheese and Parmesan cheese if using.
- Place the bowls under the broiler for 2-3 minutes until the cheese is bubbly and golden brown. Keep a close eye to prevent burning.
- Remove from the oven and let cool slightly before serving.
