- Yellow onions - 3 medium (approx. 450g)
- Olive oil - 2 tablespoons (30ml)
- Garlic - 2 cloves, minced
- Vegetable broth - 500ml
- Bay leaf - 1
- Thyme - 1 teaspoon (dried) or 2 sprigs (fresh)
- Salt - 1/2 teaspoon (to taste)
- Black pepper - 1/4 teaspoon (to taste)
- Baguette - 2 slices
- Vegan cheese - 50g (grated)
- Balsamic vinegar - 1 tablespoon (15ml)
Steps
- Peel and slice the yellow onions thinly.
- In a large pot, heat the olive oil over medium heat. Add the sliced onions and cook, stirring frequently, for about 20-25 minutes until the onions are deeply caramelized and golden brown.
- Add the minced garlic and cook for another 1-2 minutes until fragrant.
- Pour in the vegetable broth and add the bay leaf, thyme, salt, and pepper. Bring to a gentle simmer and let it cook for 10-15 minutes.
- Meanwhile, preheat your oven to 200°C (400°F). Place the baguette slices on a baking sheet and toast them in the oven for about 5-7 minutes until crispy.
- Remove the soup from heat and stir in the balsamic vinegar for added depth of flavor. Remove the bay leaf.
- To serve, ladle the soup into bowls, place a slice of toasted baguette on top, and sprinkle with grated vegan cheese. Optionally, you can broil the soup for a few minutes to melt the cheese.
