  • Beef chuck - 300 grams, diced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 1 tablespoon
  • Beef broth - 750 ml
  • Bay leaf - 1
  • Thyme - 1 teaspoon, dried
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced beef and sear until browned on all sides, about 5-7 minutes.
  2. Add the chopped onion, carrot, celery, and garlic to the pot. Sauté for another 5 minutes until the vegetables are softened.
  3. Stir in the tomato paste and cook for an additional 2 minutes, allowing the flavors to meld.
  4. Pour in the beef broth and add the bay leaf and thyme. Bring the mixture to a boil.
  5. Reduce the heat to low and cover the pot. Let it simmer for 40-45 minutes, or until the beef is tender.
  6. Season with salt and black pepper to taste. Remove the bay leaf before serving.
  7. Ladle the soup into bowls and garnish with fresh parsley.
