- Beef chuck - 300 grams, diced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Tomato paste - 1 tablespoon
- Beef broth - 750 ml
- Bay leaf - 1
- Thyme - 1 teaspoon, dried
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced beef and sear until browned on all sides, about 5-7 minutes.
- Add the chopped onion, carrot, celery, and garlic to the pot. Sauté for another 5 minutes until the vegetables are softened.
- Stir in the tomato paste and cook for an additional 2 minutes, allowing the flavors to meld.
- Pour in the beef broth and add the bay leaf and thyme. Bring the mixture to a boil.
- Reduce the heat to low and cover the pot. Let it simmer for 40-45 minutes, or until the beef is tender.
- Season with salt and black pepper to taste. Remove the bay leaf before serving.
- Ladle the soup into bowls and garnish with fresh parsley.
