- Black truffle - 20 grams
- Olive oil - 2 tablespoons
- Shallots - 50 grams, finely chopped
- Garlic - 1 clove, minced
- Vegetable broth - 500 ml
- Heavy cream - 100 ml
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh chives - 5 grams, finely chopped
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the finely chopped shallots and minced garlic, sautéing until they are soft and translucent, about 3-4 minutes.
- Add the vegetable broth to the saucepan and bring to a gentle simmer. Allow it to cook for about 10 minutes to develop the flavors.
- While the broth is simmering, clean the black truffle and slice it thinly for garnish. Reserve some slices for serving later.
- After 10 minutes, add the heavy cream to the broth, followed by the sliced truffle. Stir well and let it simmer for an additional 5 minutes.
- Using an immersion blender, blend the soup until smooth and creamy. If you do not have an immersion blender, carefully transfer the soup to a regular blender and blend until smooth, then return it to the pot.
- Season the soup with salt and black pepper to taste. Serve hot, garnished with reserved truffle slices and a sprinkle of fresh chives.
