Ingredients

  • Black truffle - 20 grams
  • Olive oil - 2 tablespoons
  • Shallots - 50 grams, finely chopped
  • Garlic - 1 clove, minced
  • Vegetable broth - 500 ml
  • Heavy cream - 100 ml
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh chives - 5 grams, finely chopped

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the finely chopped shallots and minced garlic, sautéing until they are soft and translucent, about 3-4 minutes.
  2. Add the vegetable broth to the saucepan and bring to a gentle simmer. Allow it to cook for about 10 minutes to develop the flavors.
  3. While the broth is simmering, clean the black truffle and slice it thinly for garnish. Reserve some slices for serving later.
  4. After 10 minutes, add the heavy cream to the broth, followed by the sliced truffle. Stir well and let it simmer for an additional 5 minutes.
  5. Using an immersion blender, blend the soup until smooth and creamy. If you do not have an immersion blender, carefully transfer the soup to a regular blender and blend until smooth, then return it to the pot.
  6. Season the soup with salt and black pepper to taste. Serve hot, garnished with reserved truffle slices and a sprinkle of fresh chives.
