- Ripe tomatoes - 500 grams
- Olive oil - 2 tablespoons
- Yellow onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 500 ml
- Fresh basil - 10 grams, chopped
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Sugar - 1 teaspoon (optional)
Steps
- Heat the olive oil in a medium saucepan over medium heat.
- Add the chopped onion and sauté for about 5 minutes, until soft and translucent.
- Stir in the minced garlic and cook for another minute until fragrant.
- Chop the ripe tomatoes and add them to the saucepan, cooking for about 5 minutes until they start to break down.
- Pour in the vegetable broth and bring the mixture to a boil.
- Reduce the heat and let it simmer for 15-20 minutes to allow the flavors to meld.
- Add the chopped basil, dried oregano, salt, black pepper, and sugar (if using), stirring well.
- Remove from heat and let it cool slightly before blending until smooth with an immersion blender or in a stand blender.
- Serve warm, garnished with additional fresh basil if desired.
