Ingredients

  • Ripe tomatoes - 500 grams
  • Olive oil - 2 tablespoons
  • Yellow onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Fresh basil - 10 grams, chopped
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Sugar - 1 teaspoon (optional)

Steps

  1. Heat the olive oil in a medium saucepan over medium heat.
  2. Add the chopped onion and sauté for about 5 minutes, until soft and translucent.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Chop the ripe tomatoes and add them to the saucepan, cooking for about 5 minutes until they start to break down.
  5. Pour in the vegetable broth and bring the mixture to a boil.
  6. Reduce the heat and let it simmer for 15-20 minutes to allow the flavors to meld.
  7. Add the chopped basil, dried oregano, salt, black pepper, and sugar (if using), stirring well.
  8. Remove from heat and let it cool slightly before blending until smooth with an immersion blender or in a stand blender.
  9. Serve warm, garnished with additional fresh basil if desired.
