- Salsify - 300g
- Potato - 150g
- Onion - 1 medium
- Garlic - 2 cloves
- Vegetable broth - 600ml
- Coconut milk - 100ml
- Olive oil - 1 tablespoon
- Thyme - 1 teaspoon
- Salt - to taste
- Pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Peel the salsify and cut it into small pieces. Soak in water with a little lemon juice to prevent browning.
- Peel and dice the potato. Chop the onion and mince the garlic.
- In a pot, heat olive oil over medium heat. Add the onion and garlic, sauté until translucent.
- Add the salsify and potato to the pot, stirring for a few minutes.
- Pour in the vegetable broth and add thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for about 15 minutes until the vegetables are tender.
- Using an immersion blender, blend the soup until smooth. Stir in the coconut milk and adjust seasoning if necessary.
- Serve hot, garnished with a drizzle of olive oil or a sprinkle of fresh herbs.
