Ingredients

  • Salsify - 300g
  • Potato - 150g
  • Onion - 1 medium
  • Garlic - 2 cloves
  • Vegetable broth - 600ml
  • Coconut milk - 100ml
  • Olive oil - 1 tablespoon
  • Thyme - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Peel the salsify and cut it into small pieces. Soak in water with a little lemon juice to prevent browning.
  2. Peel and dice the potato. Chop the onion and mince the garlic.
  3. In a pot, heat olive oil over medium heat. Add the onion and garlic, sauté until translucent.
  4. Add the salsify and potato to the pot, stirring for a few minutes.
  5. Pour in the vegetable broth and add thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for about 15 minutes until the vegetables are tender.
  6. Using an immersion blender, blend the soup until smooth. Stir in the coconut milk and adjust seasoning if necessary.
  7. Serve hot, garnished with a drizzle of olive oil or a sprinkle of fresh herbs.
