Soupe de salsifis is a creamy and comforting French soup that highlights the unique flavor of salsify, often referred to as the 'oyster plant' for its delicate taste. This Halal version is perfect for a cozy meal and pairs wonderfully with crusty bread.

Ingredients

  • Salsify - 200 grams
  • Potato - 100 grams
  • Leek - 1 medium, chopped
  • Onion - 1 small, diced
  • Garlic - 1 clove, minced
  • Vegetable broth - 500 ml
  • Heavy cream - 100 ml
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Peel the salsify and cut it into small pieces, placing them in a bowl of water with a splash of lemon juice to prevent browning.
  2. In a large pot, heat the olive oil over medium heat and add the chopped onion and minced garlic. Sauté until the onion is translucent.
  3. Add the chopped leek and continue to cook for 3-4 minutes until softened.
  4. Drain the salsify and add it to the pot along with the diced potato. Stir for a couple of minutes.
  5. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for about 20 minutes, or until the salsify and potatoes are tender.
  6. Using an immersion blender, purée the soup until smooth. If you don't have an immersion blender, carefully transfer to a regular blender in batches.
  7. Stir in the heavy cream and season with salt and black pepper to taste. Heat through without boiling.
  8. Serve hot, garnished with fresh parsley.
