Ingredients
- Salsify - 200 grams
- Potato - 100 grams
- Leek - 1 medium, chopped
- Onion - 1 small, diced
- Garlic - 1 clove, minced
- Vegetable broth - 500 ml
- Heavy cream - 100 ml
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Peel the salsify and cut it into small pieces, placing them in a bowl of water with a splash of lemon juice to prevent browning.
- In a large pot, heat the olive oil over medium heat and add the chopped onion and minced garlic. Sauté until the onion is translucent.
- Add the chopped leek and continue to cook for 3-4 minutes until softened.
- Drain the salsify and add it to the pot along with the diced potato. Stir for a couple of minutes.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for about 20 minutes, or until the salsify and potatoes are tender.
- Using an immersion blender, purée the soup until smooth. If you don't have an immersion blender, carefully transfer to a regular blender in batches.
- Stir in the heavy cream and season with salt and black pepper to taste. Heat through without boiling.
- Serve hot, garnished with fresh parsley.
