- Jasmine rice - 100 grams
- Chicken broth - 500 ml
- Carrot - 1 medium, diced
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent, about 3-4 minutes.
- Add the diced carrot and cook for another 2-3 minutes until slightly softened.
- Stir in the Jasmine rice and toast for 1-2 minutes, ensuring the rice is coated with the oil.
- Pour in the chicken broth and bring the mixture to a boil. Reduce heat to low and let it simmer for 15-20 minutes or until the rice is tender.
- Season with salt, black pepper, and lemon juice. Stir in the chopped parsley just before serving.
- Serve hot, garnished with additional parsley if desired.
