Ingredients

  • Jasmine rice - 100 grams
  • Chicken broth - 500 ml
  • Carrot - 1 medium, diced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent, about 3-4 minutes.
  2. Add the diced carrot and cook for another 2-3 minutes until slightly softened.
  3. Stir in the Jasmine rice and toast for 1-2 minutes, ensuring the rice is coated with the oil.
  4. Pour in the chicken broth and bring the mixture to a boil. Reduce heat to low and let it simmer for 15-20 minutes or until the rice is tender.
  5. Season with salt, black pepper, and lemon juice. Stir in the chopped parsley just before serving.
  6. Serve hot, garnished with additional parsley if desired.
