- Quinoa - 100 grams
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 750 milliliters
- Olive oil - 2 tablespoons
- Thyme - 1 teaspoon, dried
- Bay leaf - 1
- Spinach - 100 grams, fresh
- Salt - to taste
- Pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Rinse the quinoa under cold water in a fine-mesh sieve and set aside.
- In a medium pot, heat the olive oil over medium heat, then add the chopped onion, carrot, and celery. Sauté for about 5 minutes until the vegetables are softened.
- Add the minced garlic and cook for another minute until fragrant.
- Pour in the vegetable broth, then add the rinsed quinoa, dried thyme, and bay leaf. Bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for about 15 minutes, or until the quinoa is cooked and the vegetables are tender.
- Stir in the fresh spinach and cook for an additional 2-3 minutes until wilted.
- Remove the bay leaf, season the soup with salt, pepper, and lemon juice to taste. Serve hot.
