Ingredients

  • Quinoa - 100 grams
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 750 milliliters
  • Olive oil - 2 tablespoons
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Spinach - 100 grams, fresh
  • Salt - to taste
  • Pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the quinoa under cold water in a fine-mesh sieve and set aside.
  2. In a medium pot, heat the olive oil over medium heat, then add the chopped onion, carrot, and celery. Sauté for about 5 minutes until the vegetables are softened.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Pour in the vegetable broth, then add the rinsed quinoa, dried thyme, and bay leaf. Bring to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for about 15 minutes, or until the quinoa is cooked and the vegetables are tender.
  6. Stir in the fresh spinach and cook for an additional 2-3 minutes until wilted.
  7. Remove the bay leaf, season the soup with salt, pepper, and lemon juice to taste. Serve hot.
