- Quinoa - 100 grams
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Zucchini - 1 small, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Thyme - 1 teaspoon, dried
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the quinoa under cold water and set aside.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent, about 3-4 minutes.
- Add the diced carrot and celery to the pot, cooking for an additional 5 minutes until they start to soften.
- Stir in the diced zucchini, dried thyme, bay leaf, and season with salt and pepper. Cook for another 2 minutes.
- Add the rinsed quinoa and vegetable broth to the pot. Bring to a boil, then reduce the heat to low and let it simmer for 15-20 minutes, until the quinoa is cooked and the vegetables are tender.
- Remove the bay leaf and adjust seasoning if necessary. Serve hot, garnished with chopped parsley.
