Ingredients

  • Quinoa - 100 grams
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Zucchini - 1 small, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the quinoa under cold water and set aside.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent, about 3-4 minutes.
  3. Add the diced carrot and celery to the pot, cooking for an additional 5 minutes until they start to soften.
  4. Stir in the diced zucchini, dried thyme, bay leaf, and season with salt and pepper. Cook for another 2 minutes.
  5. Add the rinsed quinoa and vegetable broth to the pot. Bring to a boil, then reduce the heat to low and let it simmer for 15-20 minutes, until the quinoa is cooked and the vegetables are tender.
  6. Remove the bay leaf and adjust seasoning if necessary. Serve hot, garnished with chopped parsley.
