Ingredients

  • Chicken thighs - 300 grams, bone-in and skin-on
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Thyme - 1 teaspoon, dried or 1 sprig fresh
  • Bay leaf - 1
  • Chicken broth - 1 liter, low-sodium
  • Coconut oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - a handful, chopped for garnish

Steps

  1. In a large pot, heat coconut oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
  2. Add the minced garlic, diced carrot, and celery to the pot. Sauté for another 5 minutes until the vegetables begin to soften.
  3. Place the chicken thighs into the pot, skin side down, and sear for about 4-5 minutes until browned.
  4. Pour in the chicken broth and add the thyme and bay leaf. Bring the soup to a boil, then reduce to a simmer.
  5. Cover the pot and let it simmer for 25-30 minutes until the chicken is cooked through and tender.
  6. Remove the chicken thighs from the pot, shred the meat, and discard the skin and bones.
  7. Return the shredded chicken to the pot, season with salt and black pepper to taste, and simmer for an additional 5 minutes.
  8. Serve hot, garnished with fresh parsley.
