- Chicken thighs - 300 grams, bone-in and skin-on
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Thyme - 1 teaspoon, dried or 1 sprig fresh
- Bay leaf - 1
- Chicken broth - 1 liter, low-sodium
- Coconut oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - a handful, chopped for garnish
Steps
- In a large pot, heat coconut oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic, diced carrot, and celery to the pot. Sauté for another 5 minutes until the vegetables begin to soften.
- Place the chicken thighs into the pot, skin side down, and sear for about 4-5 minutes until browned.
- Pour in the chicken broth and add the thyme and bay leaf. Bring the soup to a boil, then reduce to a simmer.
- Cover the pot and let it simmer for 25-30 minutes until the chicken is cooked through and tender.
- Remove the chicken thighs from the pot, shred the meat, and discard the skin and bones.
- Return the shredded chicken to the pot, season with salt and black pepper to taste, and simmer for an additional 5 minutes.
- Serve hot, garnished with fresh parsley.
