- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Thyme - 1 teaspoon, dried
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cream (optional) - 2 tablespoons
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
- Stir in the diced pumpkin and chopped carrot, cooking for another 5 minutes.
- Pour in the vegetable broth and add the thyme, salt, and black pepper.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the pumpkin and carrot are tender.
- Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth.
- If using, stir in the cream for added richness.
