Ingredients

  • Pumpkin - 400 grams, peeled and diced
  • Carrot - 100 grams, peeled and diced
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Nutmeg - 1/4 teaspoon
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and diced carrot to the pot, cooking for an additional 2 minutes until fragrant.
  3. Stir in the diced pumpkin, vegetable broth, salt, black pepper, and nutmeg. Bring the mixture to a boil, then reduce the heat and simmer for about 20 minutes, or until the pumpkin is tender.
  4. Using an immersion blender, puree the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
  5. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
