- Bay leaf - 1
- Saffron - a pinch
- Mixed seafood (shrimp, mussels, white fish) - 300 grams
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat olive oil in a large pot over medium heat. Add the chopped shallots and minced garlic, sautéing until translucent.
- Stir in the diced tomatoes and cook for another 5 minutes until softened.
- Pour in the white wine, allowing it to reduce slightly, about 3 minutes.
- Add the fish stock, fresh thyme, bay leaf, and saffron to the pot. Bring to a gentle simmer.
- Add the mixed seafood to the pot and cook for 5-7 minutes, or until the seafood is cooked through and tender.
- Season the soup with salt and black pepper to taste. Remove the bay leaf before serving.
