  • Mixed seafood (shrimp, mussels, white fish) - 300 grams
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat olive oil in a large pot over medium heat. Add the chopped shallots and minced garlic, sautéing until translucent.
  2. Stir in the diced tomatoes and cook for another 5 minutes until softened.
  3. Pour in the white wine, allowing it to reduce slightly, about 3 minutes.
  4. Add the fish stock, fresh thyme, bay leaf, and saffron to the pot. Bring to a gentle simmer.
  5. Add the mixed seafood to the pot and cook for 5-7 minutes, or until the seafood is cooked through and tender.
