- Celery - 1 stalk, diced
- Tomato paste - 2 tablespoons
- Vegetable broth - 500 ml
- Dried seaweed (Nori or Kombu) - 10 grams, crumbled
- Bay leaf - 1
- Thyme - 1 teaspoon, dried
- Salt - to taste
- Black pepper - to taste
- Coconut milk - 100 ml
- Fresh parsley - for garnish, chopped
- Lemon - 1, cut into wedges
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped shallots and garlic, sautéing until translucent, about 3-4 minutes.
- Stir in the diced carrot and celery, cooking for another 5 minutes until softened.
- Add the tomato paste, stirring well to combine with the vegetables, and cook for 2 minutes.
- Pour in the vegetable broth and add the crumbled seaweed, bay leaf, thyme, salt, and black pepper. Bring the mixture to a boil, then reduce to a simmer for 15 minutes.
- Remove the bay leaf and stir in the coconut milk, allowing it to heat through for another 2-3 minutes.
- Taste and adjust seasoning as necessary. Serve hot, garnished with fresh parsley and a wedge of lemon on the side.
