  • Tomato paste - 2 tablespoons
  • Vegetable broth - 500 ml
  • Dried seaweed (Nori or Kombu) - 10 grams, crumbled
  • Bay leaf - 1
  • Thyme - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste
  • Coconut milk - 100 ml
  • Fresh parsley - for garnish, chopped
  • Lemon - 1, cut into wedges

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped shallots and garlic, sautéing until translucent, about 3-4 minutes.
  2. Stir in the diced carrot and celery, cooking for another 5 minutes until softened.
  3. Add the tomato paste, stirring well to combine with the vegetables, and cook for 2 minutes.
  4. Pour in the vegetable broth and add the crumbled seaweed, bay leaf, thyme, salt, and black pepper. Bring the mixture to a boil, then reduce to a simmer for 15 minutes.
  5. Remove the bay leaf and stir in the coconut milk, allowing it to heat through for another 2-3 minutes.
  6. Taste and adjust seasoning as necessary. Serve hot, garnished with fresh parsley and a wedge of lemon on the side.
