- Fish stock - 500 ml
- Saffron threads - 1/4 teaspoon
- Bay leaf - 1
- Thyme - 1 teaspoon, dried
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- White fish fillets (e.g., cod or haddock) - 200 grams, cut into chunks
- Shrimp - 100 grams, peeled and deveined
- Fresh parsley - 1 tablespoon, chopped
- Lemon - 1, for serving
Steps
- In a large pot, heat the olive oil over medium heat. Add the sliced leek and sauté for about 5 minutes until softened.
- Stir in the minced garlic and diced tomato, cooking for another 2 minutes until fragrant.
- Pour in the fish stock and bring to a simmer. Add the saffron, bay leaf, thyme, salt, and black pepper.
- Add the fish chunks and shrimp to the pot. Simmer for 10 minutes until the fish is cooked through and the shrimp are pink.
- Remove the bay leaf and stir in the chopped parsley just before serving.
- Ladle the soup into bowls and serve with lemon wedges on the side.
