  • Fish stock - 500 ml
  • Saffron threads - 1/4 teaspoon
  • Bay leaf - 1
  • Thyme - 1 teaspoon, dried
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • White fish fillets (e.g., cod or haddock) - 200 grams, cut into chunks
  • Shrimp - 100 grams, peeled and deveined
  • Fresh parsley - 1 tablespoon, chopped
  • Lemon - 1, for serving

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the sliced leek and sauté for about 5 minutes until softened.
  2. Stir in the minced garlic and diced tomato, cooking for another 2 minutes until fragrant.
  3. Pour in the fish stock and bring to a simmer. Add the saffron, bay leaf, thyme, salt, and black pepper.
  4. Add the fish chunks and shrimp to the pot. Simmer for 10 minutes until the fish is cooked through and the shrimp are pink.
  5. Remove the bay leaf and stir in the chopped parsley just before serving.
  6. Ladle the soup into bowls and serve with lemon wedges on the side.
