  • White fish (e.g., cod or sole) - 200 grams, cut into chunks
  • Prawns - 100 grams, peeled and deveined
  • Fennel bulb - 1 small, sliced
  • Saffron strands - a pinch
  • Fresh thyme - 2 sprigs
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the shallots and garlic, sautéing until softened.
  2. Add the diced tomatoes and fennel, cooking for another 5 minutes until the tomatoes break down.
  3. Pour in the fish stock and bring to a simmer. Add the saffron, thyme, bay leaf, salt, and pepper.
  4. Stir in the white fish and prawns, cooking for about 5-7 minutes until the seafood is cooked through.
  5. Remove the thyme sprigs and bay leaf. Adjust seasoning to taste.
  6. Serve hot, garnished with fresh parsley.
