- Prawns - 100 grams, peeled and deveined
- Fennel bulb - 1 small, sliced
- Saffron strands - a pinch
- Fresh thyme - 2 sprigs
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the shallots and garlic, sautéing until softened.
- Add the diced tomatoes and fennel, cooking for another 5 minutes until the tomatoes break down.
- Pour in the fish stock and bring to a simmer. Add the saffron, thyme, bay leaf, salt, and pepper.
- Stir in the white fish and prawns, cooking for about 5-7 minutes until the seafood is cooked through.
- Remove the thyme sprigs and bay leaf. Adjust seasoning to taste.
- Serve hot, garnished with fresh parsley.
