  • Green split peas - 150 grams

  • Celery - 1 stalk, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 700 ml
  • Olive oil - 1 tablespoon
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon (optional)
  • Fresh parsley - for garnish

Steps

  1. Rinse the green split peas under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat and sauté the chopped onion, carrot, and celery for about 5 minutes until softened.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Stir in the rinsed split peas, vegetable broth, thyme, bay leaf, salt, and black pepper.
  5. Bring the mixture to a boil, then reduce the heat to low and simmer for about 30 minutes, or until the split peas are tender.
  6. Remove the bay leaf and use an immersion blender to puree the soup to your desired consistency, or leave it chunky if preferred.
  7. Adjust seasoning with salt and pepper, and stir in lemon juice if using.
  8. Serve hot, garnished with fresh parsley.
