- Split peas - 150g
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 750ml
- Olive oil - 1 tablespoon
- Thyme - 1 teaspoon, dried
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Parsley - for garnish
Steps
- Rinse the split peas under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté for about 5 minutes until the vegetables are softened.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the rinsed split peas, vegetable broth, dried thyme, bay leaf, salt, and black pepper.
- Bring the soup to a boil, then reduce the heat to low and cover the pot. Simmer for about 30 minutes, or until the split peas are tender.
- Remove the bay leaf and use an immersion blender to puree the soup to your desired consistency, or leave it chunky if preferred.
- Taste and adjust seasoning with more salt and pepper if needed.
- Serve hot, garnished with fresh parsley.
