  • Vegetable broth - 750ml
  • Olive oil - 1 tablespoon
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Parsley - for garnish

Steps

  1. Rinse the split peas under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté for about 5 minutes until the vegetables are softened.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Stir in the rinsed split peas, vegetable broth, dried thyme, bay leaf, salt, and black pepper.
  5. Bring the soup to a boil, then reduce the heat to low and cover the pot. Simmer for about 30 minutes, or until the split peas are tender.
  6. Remove the bay leaf and use an immersion blender to puree the soup to your desired consistency, or leave it chunky if preferred.
  7. Taste and adjust seasoning with more salt and pepper if needed.
  8. Serve hot, garnished with fresh parsley.
