  • Green split peas - 150 grams
  • Carrot - 1 medium, diced
  • Celery stalk - 1, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 700 ml
  • Olive oil - 1 tablespoon
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the green split peas under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery; sauté for about 5 minutes until softened.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Stir in the rinsed split peas, vegetable broth, thyme, bay leaf, salt, and pepper. Bring to a boil.
  5. Reduce the heat to low, cover the pot, and let it simmer for about 30 minutes, or until the peas are tender.
  6. Remove the bay leaf and use an immersion blender to puree the soup to your desired consistency (smooth or chunky).
  7. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
