- Green split peas - 150 grams
- Carrot - 1 medium, diced
- Celery stalk - 1, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 700 ml
- Olive oil - 1 tablespoon
- Thyme - 1 teaspoon, dried
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the green split peas under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery; sauté for about 5 minutes until softened.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the rinsed split peas, vegetable broth, thyme, bay leaf, salt, and pepper. Bring to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for about 30 minutes, or until the peas are tender.
- Remove the bay leaf and use an immersion blender to puree the soup to your desired consistency (smooth or chunky).
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
