  • Frozen green peas - 300 grams
  • Vegetable broth - 500 ml
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Fresh thyme - 1 teaspoon, chopped
  • Bay leaf - 1
  • Heavy cream - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and chopped thyme, and cook for an additional minute until fragrant.
  3. Pour in the vegetable broth and add the bay leaf. Bring to a boil.
  4. Stir in the frozen green peas and reduce the heat to a simmer. Cook for about 10 minutes, or until the peas are tender.
  5. Remove the bay leaf and use an immersion blender to puree the soup until smooth. Alternatively, transfer to a blender in batches.
  6. Stir in the heavy cream and season with salt and black pepper to taste. Heat through for another 2 minutes.
  7. Serve hot, garnished with fresh parsley.
