- Frozen green peas - 300 grams
- Vegetable broth - 500 ml
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Fresh thyme - 1 teaspoon, chopped
- Bay leaf - 1
- Heavy cream - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and chopped thyme, and cook for an additional minute until fragrant.
- Pour in the vegetable broth and add the bay leaf. Bring to a boil.
- Stir in the frozen green peas and reduce the heat to a simmer. Cook for about 10 minutes, or until the peas are tender.
- Remove the bay leaf and use an immersion blender to puree the soup until smooth. Alternatively, transfer to a blender in batches.
- Stir in the heavy cream and season with salt and black pepper to taste. Heat through for another 2 minutes.
- Serve hot, garnished with fresh parsley.
