- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Garlic - 1 clove, minced
- Fresh parsley - 1 tablespoon, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 teaspoon (optional)
Steps
- In a large pot, heat the olive oil over medium heat. Add the sliced leeks and minced garlic, sautéing until softened, about 5 minutes.
- Add the diced potato to the pot and stir well.
- Pour in the vegetable broth, bring to a boil, then reduce the heat to low and let it simmer for about 15-20 minutes, or until the potatoes are tender.
- Using an immersion blender, blend the soup until smooth. If you don't have an immersion blender, carefully transfer the soup to a regular blender in batches.
- Season with salt, black pepper, and lemon juice if using. Stir in the chopped parsley.
- Serve hot, garnished with additional parsley if desired.
