Ingredients

  • Leeks - 2 medium, thoroughly cleaned and sliced
  • Potato - 1 medium (about 150g), peeled and diced
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Garlic - 1 clove, minced
  • Fresh parsley - 1 tablespoon, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 teaspoon (optional)

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the sliced leeks and minced garlic, sautéing until softened, about 5 minutes.
  2. Add the diced potato to the pot and stir well.
  3. Pour in the vegetable broth, bring to a boil, then reduce the heat to low and let it simmer for about 15-20 minutes, or until the potatoes are tender.
  4. Using an immersion blender, blend the soup until smooth. If you don't have an immersion blender, carefully transfer the soup to a regular blender in batches.
  5. Season with salt, black pepper, and lemon juice if using. Stir in the chopped parsley.
  6. Serve hot, garnished with additional parsley if desired.
