- Leeks - 2 large, cleaned and chopped
- Potato - 1 medium, peeled and diced (about 150g)
- Vegetable broth - 500 ml
- Butter - 30 g
- Heavy cream - 100 ml
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh chives - for garnish
Steps
- In a large pot, melt the butter over medium heat. Add the chopped leeks and sauté for about 5 minutes until softened.
- Add the diced potato to the pot and stir for another 2 minutes.
- Pour in the vegetable broth, bring to a boil, then reduce heat to a simmer. Cook for 15 minutes, or until the potatoes are tender.
- Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
- Stir in the heavy cream, and season with salt and black pepper. Heat through for an additional 2-3 minutes.
- Ladle the soup into bowls and garnish with chopped fresh chives before serving.
