Ingredients

  • Red bell peppers - 2 medium
  • Yellow bell pepper - 1 medium
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, chopped
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Fresh basil - 1/4 cup, chopped
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cayenne pepper - 1/4 teaspoon (adjust to taste)
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the red and yellow bell peppers in half, remove the seeds, and place them cut-side down on a baking sheet.
  3. Roast the peppers in the preheated oven for 20 minutes or until the skins are blistered and charred.
  4. While the peppers are roasting, heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  5. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  6. Once the peppers are roasted, remove them from the oven and let them cool slightly. Peel off the skins and chop the flesh.
  7. Add the chopped peppers to the pot along with the vegetable broth, salt, black pepper, cayenne pepper, basil, and thyme. Bring to a boil.
  8. Reduce the heat and let it simmer for 10 minutes to allow the flavors to meld.
  9. Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches if necessary.
  10. Stir in the lemon juice before serving, adjusting seasoning if necessary.
