- Red bell peppers - 2 medium
- Yellow bell pepper - 1 medium
- Garlic - 3 cloves, minced
- Onion - 1 medium, chopped
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Fresh basil - 1/4 cup, chopped
- Fresh thyme - 1 teaspoon, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cayenne pepper - 1/4 teaspoon (adjust to taste)
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- Cut the red and yellow bell peppers in half, remove the seeds, and place them cut-side down on a baking sheet.
- Roast the peppers in the preheated oven for 20 minutes or until the skins are blistered and charred.
- While the peppers are roasting, heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Once the peppers are roasted, remove them from the oven and let them cool slightly. Peel off the skins and chop the flesh.
- Add the chopped peppers to the pot along with the vegetable broth, salt, black pepper, cayenne pepper, basil, and thyme. Bring to a boil.
- Reduce the heat and let it simmer for 10 minutes to allow the flavors to meld.
- Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches if necessary.
- Stir in the lemon juice before serving, adjusting seasoning if necessary.
