- Parsnips - 300 grams, peeled and chopped
- Carrot - 100 grams, peeled and chopped
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Thyme - 1 teaspoon, dried
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Coconut milk - 100 ml (optional for creaminess)
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a large pot over medium heat. Add the diced onion and garlic, sautéing until soft and translucent, about 5 minutes.
- Add the chopped parsnips and carrot to the pot, stirring to combine with the onion and garlic. Sauté for another 5 minutes.
- Pour in the vegetable broth, add the dried thyme and bay leaf, and bring the mixture to a boil.
- Reduce the heat to low and let the soup simmer for 15-20 minutes, or until the parsnips and carrots are tender.
- Remove the bay leaf and blend the soup until smooth using an immersion blender or a regular blender.
- If desired, stir in the coconut milk for added creaminess and season with salt and black pepper to taste.
- Serve hot, garnished with fresh parsley.
