Ingredients

  • Parsnips - 300 grams, peeled and chopped
  • Carrot - 100 grams, peeled and chopped
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Coconut milk - 100 ml (optional for creaminess)
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and garlic, sautéing until soft and translucent, about 5 minutes.
  2. Add the chopped parsnips and carrot to the pot, stirring to combine with the onion and garlic. Sauté for another 5 minutes.
  3. Pour in the vegetable broth, add the dried thyme and bay leaf, and bring the mixture to a boil.
  4. Reduce the heat to low and let the soup simmer for 15-20 minutes, or until the parsnips and carrots are tender.
  5. Remove the bay leaf and blend the soup until smooth using an immersion blender or a regular blender.
  6. If desired, stir in the coconut milk for added creaminess and season with salt and black pepper to taste.
  7. Serve hot, garnished with fresh parsley.
