Ingredients

  • Turnips - 300 grams, peeled and diced
  • Carrot - 100 grams, diced
  • Potato - 150 grams, diced
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Celery - 1 stalk, diced
  • Vegetable broth - 600 ml
  • Olive oil - 1 tablespoon
  • Thyme - 1 teaspoon, dried or 2 sprigs fresh
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent, about 5 minutes.
  2. Add the diced turnips, carrot, potato, and celery to the pot, stirring well for another 5 minutes.
  3. Pour in the vegetable broth, and add the thyme, bay leaf, salt, and black pepper. Bring the mixture to a boil.
  4. Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 25 minutes, or until the vegetables are tender.
  5. Remove the bay leaf and thyme sprigs (if using fresh). Use an immersion blender to blend the soup to your desired consistency, or leave it chunky for more texture.
  6. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
