- Turnips - 300 grams, peeled and diced
- Carrot - 100 grams, diced
- Potato - 150 grams, diced
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Celery - 1 stalk, diced
- Vegetable broth - 600 ml
- Olive oil - 1 tablespoon
- Thyme - 1 teaspoon, dried or 2 sprigs fresh
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent, about 5 minutes.
- Add the diced turnips, carrot, potato, and celery to the pot, stirring well for another 5 minutes.
- Pour in the vegetable broth, and add the thyme, bay leaf, salt, and black pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 25 minutes, or until the vegetables are tender.
- Remove the bay leaf and thyme sprigs (if using fresh). Use an immersion blender to blend the soup to your desired consistency, or leave it chunky for more texture.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
