  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Fresh thyme - 2 sprigs
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a pot over medium heat.
  2. Add the sliced leek and minced garlic, sautéing until translucent, about 3 minutes.
  3. Stir in the diced turnips, carrot, and potato, cooking for another 5 minutes.
  4. Add the vegetable broth, thyme, bay leaf, salt, and pepper to the pot.
  5. Bring the mixture to a boil, then reduce heat and let it simmer for 25 minutes, or until the vegetables are tender.
  6. Remove the bay leaf and thyme sprigs, then use an immersion blender to purée the soup to your desired consistency.
  7. Serve hot, garnished with fresh parsley.
