- Bay leaf - 1

Steps
- Heat the olive oil in a pot over medium heat.
- Add the sliced leek and minced garlic, sautéing until translucent, about 3 minutes.
- Stir in the diced turnips, carrot, and potato, cooking for another 5 minutes.
- Add the vegetable broth, thyme, bay leaf, salt, and pepper to the pot.
- Bring the mixture to a boil, then reduce heat and let it simmer for 25 minutes, or until the vegetables are tender.
- Remove the bay leaf and thyme sprigs, then use an immersion blender to purée the soup to your desired consistency.
