- Lamb shoulder, boneless - 300 grams
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Potato - 1 medium, diced
- Tomato paste - 2 tablespoons
- Beef or vegetable broth - 500 ml
- Fresh thyme - 2 sprigs
- Bay leaf - 1
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sauté until translucent.
- Add the diced carrot, celery, and potato to the pot. Cook for about 5 minutes, stirring occasionally.
- Cut the lamb shoulder into bite-sized pieces and add them to the pot. Brown the meat for about 5 minutes.
- Stir in the tomato paste and cook for an additional 2 minutes.
- Pour in the broth and add the thyme, bay leaf, salt, and black pepper. Bring to a boil, then reduce the heat and let it simmer for 40 minutes, or until the lamb is tender.
- Remove the thyme sprigs and bay leaf before serving. Garnish with fresh parsley.
