  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Potato - 1 medium, diced
  • Tomato paste - 2 tablespoons
  • Beef or vegetable broth - 500 ml
  • Fresh thyme - 2 sprigs
  • Bay leaf - 1
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sauté until translucent.
  2. Add the diced carrot, celery, and potato to the pot. Cook for about 5 minutes, stirring occasionally.
  3. Cut the lamb shoulder into bite-sized pieces and add them to the pot. Brown the meat for about 5 minutes.
  4. Stir in the tomato paste and cook for an additional 2 minutes.
  5. Pour in the broth and add the thyme, bay leaf, salt, and black pepper. Bring to a boil, then reduce the heat and let it simmer for 40 minutes, or until the lamb is tender.
  6. Remove the thyme sprigs and bay leaf before serving. Garnish with fresh parsley.
