Ingredients

  • Leeks - 1 medium, cleaned and sliced
  • Potatoes - 200 grams, peeled and diced
  • Vegetable broth - 500 ml
  • Dijon mustard - 2 tablespoons
  • Greek yogurt (low-fat) - 100 grams
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the sliced leeks and sauté for about 5 minutes until they become soft.
  2. Add the diced potatoes to the pot and stir well to combine with the leeks.
  3. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 15 minutes, or until the potatoes are tender.
  4. Once the potatoes are cooked, stir in the Dijon mustard and Greek yogurt. Blend the soup using an immersion blender until smooth. If a regular blender is used, allow it to cool slightly before blending.
  5. Season the soup with salt and black pepper to taste.
  6. Serve hot, garnished with fresh parsley.
