- Leeks - 1 medium, cleaned and sliced
- Potatoes - 200 grams, peeled and diced
- Vegetable broth - 500 ml
- Dijon mustard - 2 tablespoons
- Greek yogurt (low-fat) - 100 grams
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the sliced leeks and sauté for about 5 minutes until they become soft.
- Add the diced potatoes to the pot and stir well to combine with the leeks.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 15 minutes, or until the potatoes are tender.
- Once the potatoes are cooked, stir in the Dijon mustard and Greek yogurt. Blend the soup using an immersion blender until smooth. If a regular blender is used, allow it to cool slightly before blending.
- Season the soup with salt and black pepper to taste.
- Serve hot, garnished with fresh parsley.
