Ingredients
- Green or brown lentils - 100 grams
- Carrot - 1 medium, diced
- Celery stalk - 1, diced
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 750 milliliters
- Dried thyme - 1 teaspoon
- Bay leaf - 1
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the lentils under cold water and set aside.
- In a medium pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic, diced carrot, and diced celery to the pot. Cook for another 5 minutes, stirring occasionally.
- Stir in the rinsed lentils, vegetable broth, dried thyme, bay leaf, salt, and black pepper. Bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for about 30 minutes, or until the lentils are tender.
- Remove the bay leaf and adjust the seasoning if necessary. Serve hot, garnished with fresh parsley.
