Ingredients

  • Green or brown lentils - 100 grams
  • Carrot - 1 medium, diced
  • Celery stalk - 1, diced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 750 milliliters
  • Dried thyme - 1 teaspoon
  • Bay leaf - 1
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a medium pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
  3. Add the minced garlic, diced carrot, and diced celery to the pot. Cook for another 5 minutes, stirring occasionally.
  4. Stir in the rinsed lentils, vegetable broth, dried thyme, bay leaf, salt, and black pepper. Bring the mixture to a boil.
  5. Reduce the heat to low, cover the pot, and let it simmer for about 30 minutes, or until the lentils are tender.
  6. Remove the bay leaf and adjust the seasoning if necessary. Serve hot, garnished with fresh parsley.
