- Green or brown lentils - 100 grams
- Carrot - 1 medium, diced
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Celery - 1 stalk, diced
- Vegetable broth - 500 milliliters
- Bay leaf - 1
- Thyme - 1 teaspoon, dried
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the lentils under cold water and set aside.
- In a medium pot, heat the olive oil over medium heat.
- Add the chopped onion, carrot, and celery, and sauté for about 5-7 minutes until softened.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the rinsed lentils, vegetable broth, bay leaf, thyme, salt, and pepper to the pot.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot.
- Simmer for about 30 minutes, or until the lentils are tender.
- Remove the bay leaf and adjust seasoning if necessary.
- Serve hot, garnished with chopped parsley.
