Ingredients

  • Green or brown lentils - 100 grams
  • Carrot - 1 medium, diced
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Celery - 1 stalk, diced
  • Vegetable broth - 500 milliliters
  • Bay leaf - 1
  • Thyme - 1 teaspoon, dried
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a medium pot, heat the olive oil over medium heat.
  3. Add the chopped onion, carrot, and celery, and sauté for about 5-7 minutes until softened.
  4. Stir in the minced garlic and cook for another minute until fragrant.
  5. Add the rinsed lentils, vegetable broth, bay leaf, thyme, salt, and pepper to the pot.
  6. Bring the mixture to a boil, then reduce the heat to low and cover the pot.
  7. Simmer for about 30 minutes, or until the lentils are tender.
  8. Remove the bay leaf and adjust seasoning if necessary.
  9. Serve hot, garnished with chopped parsley.
