- Olive oil - 1 tablespoon
- Fresh thyme - 1 teaspoon, chopped
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, cooking until the onion is translucent, about 3-4 minutes.
- Stir in the diced carrot, celery, and potato, and cook for another 5 minutes, stirring occasionally.
