  • Green beans - 100 grams, trimmed and cut into 2 cm pieces
  • Spinach - 100 grams, fresh
  • Leek - 1 medium, sliced
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh thyme - 1 teaspoon, chopped
  • Fresh parsley - 1 tablespoon, chopped

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the sliced leek and minced garlic, sautéing for about 3-4 minutes until softened and fragrant.
  3. Stir in the diced zucchini and cauliflower florets, cooking for another 5 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Add the green beans and thyme, then reduce the heat and simmer for 10-15 minutes until the vegetables are tender.
  6. Stir in the fresh spinach and cook for an additional 2 minutes until wilted.
  7. Season with salt and black pepper to taste.
  8. Serve hot, garnished with fresh parsley.
