  • Green beans - 200 grams, trimmed and cut into 2 cm pieces
  • Potato - 1 medium (about 150 grams), peeled and diced
  • Carrot - 1 medium (about 100 grams), diced
  • Onion - 1 small (about 70 grams), finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Fresh thyme - 1 teaspoon, chopped
  • Fresh parsley - 1 tablespoon, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the olive oil in a medium pot over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
  2. Add the minced garlic and diced carrot, and continue to sauté for another 3 minutes.
  3. Stir in the diced potato and green beans, mixing well to combine with the other vegetables.
  4. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low and let it simmer for about 15 minutes, or until the vegetables are tender.
  5. Add the fresh thyme, parsley, lemon juice, salt, and black pepper. Stir to combine and let it simmer for an additional 2-3 minutes.
  6. Remove from heat and let cool slightly before blending the soup to your desired consistency. You can choose to blend it completely for a creamy texture or partially for a chunkier version.
  7. Serve hot, garnished with extra parsley if desired.
