- Green beans - 200 grams, trimmed and cut into 2 cm pieces
- Potato - 1 medium (about 150 grams), peeled and diced
- Carrot - 1 medium (about 100 grams), diced
- Onion - 1 small (about 70 grams), finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Fresh thyme - 1 teaspoon, chopped
- Fresh parsley - 1 tablespoon, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Heat the olive oil in a medium pot over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
- Add the minced garlic and diced carrot, and continue to sauté for another 3 minutes.
- Stir in the diced potato and green beans, mixing well to combine with the other vegetables.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low and let it simmer for about 15 minutes, or until the vegetables are tender.
- Add the fresh thyme, parsley, lemon juice, salt, and black pepper. Stir to combine and let it simmer for an additional 2-3 minutes.
- Remove from heat and let cool slightly before blending the soup to your desired consistency. You can choose to blend it completely for a creamy texture or partially for a chunkier version.
- Serve hot, garnished with extra parsley if desired.
